Tabby's No Bake Banana Split Cake

 

 

Ingredients

3 cups vanilla wafers or 3 cups graham wafers, crushed
4 bananas, sliced lenghtwise
9 ounces Eagle Brand Condensed Milk
1/4 cup lemon juice
2/3 cup margarine
1 (20 ounce) cans crushed pineapple, well drained
1000 ml regular Cool Whip or 1 (16 ounce) containers Cool Whip Free
pecans or nuts
maraschino cherries
32 g vanilla instant pudding mix ( or your favorite)
coconut

Directions

Mix the wafer with the melted margarine; press in a 9X12 pan. (The box says 425g.).
Cover the crust with slice bananas.
Mix the eagle brand milk and lemon juice and spread over the bananas. (The can says 300ml.).
Spread the drained pineapple on top of the milk.
Make the pudding like the recipe on the box and spread on top of the pineapple. (I use the 4 to 6 serving box.).
Cover with a large tub of Cool Whip. Sprinkle with fine coconut, nuts, and cherries.
Refrigerate overnight.

Tabitha's Chocolate Chip Brownies


  • 1/4 cup butter or margarine -- melted
  • 3/4 cup sugar
  • 1 egg
  • 1/2 cup sour cream
  • 1 teaspoon vanilla
  • 1 cup all-purpose flour -- unsifted
  • 1/4 cup unsweetened cocoa powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup semisweet chocolate chips
Cream butter or margarine, sugar and eggs in small bowl until fluffy. Add sour cream and vanilla. Beat well. Combine flour, cocoa, baking soda, and salt. Blend into creamed mixture. Stir in chocolate chips. Spread evenly in greased 9 inch baking pan. Bake at 350 for 30 to 35 minutes or until toothpick inserted in center comes out clean.

This is an amazing recipe. The brownies come out so moist and they just melt in your mouth. But I usually double the recipe and place it in a nine by thirteen pan. It takes a little longer to bake but you end up with thick and moist brownies. This is one of my favorites. I have never made it and had anyone say yeah they are okay. I love to see the response I get from others when they try these brownies for the first time. It always feels good to bring joy to someone with something so simple. Hope you enjoy them too.
