Jane's Quick and Easy Berry Crumb Pie


First of all, buy the ingredients and keep them in the freezer for that time when you really need to make a dessert in a hurry.
Pet/Ritz or any brand unbaked frozen pie crusts.
1 package of mixed frozen berries.
1 package of frozen blueberries.
When ready to bake:
Remove one frozen pie crust from the freezer. (no need to defrost).
Remove the package of frozen mixed berries and ease them into the pie crust.
If you have any left over fresh-fruit on hand, cut up and place in the crust. I've used cherries, peaches and pears. You do have to pit the cherries, but can leave the skin on a peach or a pear.
If no fresh fruit around, remove the frozen blueberries and use as much of them as you need to fill in any holes. Seal and put the rest back in the freezer.
Mix together:
Scant 1/3 cup of sugar
2 Tablespoons flour
1/4 teaspoon of cinnamon
Sprinkle over the fruit.
Then mix:
1/2 cup flour
1/4 cup butter or butter substitute cut up into small pieces
1/4 cup sugar
Healthy sprinkle of cinnamon.
Blend this together. (This the only labor intensive part of the pie, but
doesn't take long.)
Crumble this on the top of the pie.
Place on a cookie sheet (important, because pie is in an aluminum pan) and bake in 400 degree oven for 40 to 45 minutes
Serve with Reddi-whip or ice cream.
(This can also be made with apples, but then, of course, you have to peel and slice them which takes a lot more time.)
